Preheat oven to 350 F. Coat 8-inch square baking dish with cooking spray.
In large bowl, combine bread, applesauce, raisins, brown sugar, cinnamon and nutmeg.
In small bowl, blend milk, egg yolks, and vanilla until mixed. Pour milk mixture over bread mixture; stir until well combined. Spoon into prepared baking dish. Bake 30 minutes.
Meanwhile, in small bowl with electric mixer at high speed, beat egg whites and cream of tartar until frothy. Gradually beat in granulated sugar; continue beating until stiff peaks form. Remove bread pudding from oven. Spread meringue evenly over hot pudding; seal to edges of dish. Return to oven and bake 10 to 12 minutes longer or until meringue is light brown. Cool on wire rack. Serve warm.
